Roulade von Huhn, Speck, Birne und Lady Blue

Ein Rouleau ist einfach zuzubereiten, macht aber in Kombination mit Birne und Käse großen Eindruck.

Zutaten

Transglutaminase
braune Buchenpilze
gehackte Petersilie
Honig
Couscous
10Speckscheiben
40units.grammLady Blue (Ziegenkäse)
300units.grammHähnchenschenkel
1Birne oder Apfel

Zubereitung

make sure they slightly overlap.
  • Lay the chicken thigh on the bacon, tightly next to each other.
  • Peel the pear/apple, slice, and caramelize in a pan with butter and sugar.
  • Place a few slices of pear/apple and the lady blue to taste on the chicken thigh.
  • Using a fine sieve, lightly dust the transglutaminase over and roll up tightly.
  • Place the roulade in the refrigerator and leave for at least four hours.
  • Fry the roulade until crispy all around and place in an oven with a core temperature of 64°C.
  • Cook the couscous according to the instructions on the package.
  • Season with salt and pepper and add the sautéed beech mushrooms along with the chopped parsley.
  • Serve on a wooden board, with caramelized pear/apple, the couscous, and some honey.
