The sole is perhaps the most well-known and coveted flatfish. The fish is recognizable by its beautiful oval-round shape, with a round head. The fish has a reddish-brown color, which serves as camouflage when the fish searches for food at night. During the day, the fish lies buried in the sand on the seabed. The fish can reach a length of up to 70 centimeters and a weight of up to 3 kilos. Sole has wonderfully firm flesh and a delicate, juicy taste and is suitable for drying, steaming, frying, and grilling.
