Naturally, the flesh of the rainbow trout is light pink in color, but because this is a farmed trout, the color can vary from white to red. The texture of the flesh is fine and the taste is neutral. Very tasty to bake, grill, or poach whole and in combination with, for example, herb butter or a fresh salad.
