The anise mushroom is also known as the field mushroom. As the name suggests, this light yellow mushroom has a slight anise flavor, and the flesh is firm in texture. The mushroom has a uniform, round cap and a white stem. The anise mushrooms should be used as fresh as possible. The mushroom is best preserved at a temperature of 2 degrees. This way, a shelf life of two to three days can be achieved. The field mushroom is tastiest when young, as the flesh turns dark brown as it ages. The light anise flavor makes these mushrooms very suitable for use in salads, briefly sauté them for this purpose. Tip: do not heat the mushroom too long to preserve the anise flavor.
