The deer is one of the largest mammals in Western Europe. The diet of deer consists mainly of: tree bark, leaves, acorns, chestnuts, and leaves. Known deer cuts are deer back, fillets from the back, technical cuts from the haunch, chuck from the shoulder, and thus the neck fillet. Venison is characterized by its dark red color of the meat and has a somewhat milder taste compared to other game species. Deer pairs well with various types of sauces, such as: red wine sauce, cognac sauce, and red currant sauce.
