The fresh magret de canard from HANOS comes from the house Procanard. The magret de canard is the duck breast of Mulard ducks. The Mulard duck is a cross between a female Peking duck and a male Barbary duck, the magret de canard always comes from a male Mulard duck. Only from these ducks may the breast be called 'Magret de canard', from other ducks the breast is called 'filet de canard' or 'filet de canette'. The duck breast has a deep red color, a nice fat edge, and is deliciously tender and full of flavor.
