Guinea fowl originally come from the coastal areas of Guinea and were brought to Western Europe by the Portuguese. Breeding guinea fowl requires patience: they eat a lot but grow very slowly. Our guinea fowl come from France, from the house of Savel in Brittany. They receive a special and balanced diet based on plants and minerals, enriched with vitamins. Suprême means that the meat part consists of a single breast fillet with skin and first wing joint. The meat is lean and has a yellow-brown color. Guinea fowl has a light game flavor and therefore pairs excellently with the earthy flavors of truffle and spinach, for example. Prepare the meat with care to prevent drying out.
