The Pacific Yellowtail Kingfish, also known as Hiramasa, is a highly prized fish due to its firm texture, sublime taste, high fat content, and extraordinary versatility: raw, smoked, grilled, fried, roasted, or poached; the flavor remains intact. Normally, this fish is imported from Japan and Australia, but this Dutch Yellowtail is farmed on land in waters from the Oosterschelde in Zeeland. Thanks to innovative technologies, the fish is sustainably produced without the use of antibiotics. The fish is related to mackerel but is gastronomically more comparable to tuna.
