Masago is also internationally known as capelin caviar. Masago is a Japanese term for the roe that originally comes from the smelt. Smelt is related to the sand lance and is found in the waters of the Baltic Sea and the northern part of the Atlantic Ocean. Masago has a crunchy texture with a pleasant bite.
