Pecorino is a hard salty Italian cheese made from sheep's milk. The name of the cheese derives from the Italian word for sheep: pecora. Pecorino is mainly used in the preparation of dishes and in tapenades. The spicy flavoring was already eaten two thousand years ago as part of the Roman army's ration. Today, the cheese is still made according to the traditional recipe. The sheep graze on the fields of Lazio and Sardinia. The cheese has a maturation period of eight months.
