The rutabaga is one of the 'forgotten vegetables' and belongs to the cabbage family. Unlike other types of cabbage, rutabaga grows underground. Beneath the rough skin of this thick tuber lies the yellow, fragrant 'flesh'. This vegetable is mildly sweet and aromatic in flavor. This flavor is best brought out when the vegetable is boiled or stewed.
