Zubereitung

  • Choose a nice cutter and cut out the brick dough.
  • Place the 'chips' between two baking mats and bake for about 6 minutes at 180°C.
  • Remove the baking mats and brush the 'chips' with a little olive oil.
  • Turn off or lower the oven fan and bake them briefly until crispy (if the fan cannot be turned off, continue baking them between the baking mats). 
  • Separate the yolk from the egg white.
  • Store the yolk in sunflower oil.
  • it should resemble a watch strap.

    Sprinkle cane sugar on a slice of foie gras* and caramelize it with a torch until nicely browned.

    Place the slice of foie gras in the center of the pancetta
