Green Boost

pear juice, carrot power juice, and ginger power juice in a blender.

Add the finely chopped celery and winter carrot.

Add the parsley and spinach to the blender.

Blend again until everything is well mixed and you have a smooth green drink.

Pour the mixture into a pitcher.

Add the Ginger Beer and stir gently.

Divide the mocktail among glasses with crushed ice.

Add a layer of cocktail foam (ginger lemongrass) on top of each glass for extra flavor and presentation.

Garnish each glass with a bit of garden cress, a few pumpkin seeds, spinach powder, and a red chili pepper.
