Artichoke with black garlic and smoked eel

With crème fraîche and pomegranate.

Ingredients

Smoked eel
1Artichoke
black garlic cream
1Lemon
Crème fraîche
Pomegranate seeds

Preparation

  1. Cook the artichoke in water with 2 halves of lemon until done.
  2. Peel the leaves and trim the base.
  3. Place a piece of smoked eel on the artichoke and secure with a skewer.
  4. Pipe a little black garlic cream and crème fraîche onto the eel and add pomegranate seeds on top.
