Chanterelle butter

Butter of chanterelles.The chanterelle is highly prized for its peppery, spicy flavor and the aroma of apricots.

Ingredients

500gChanterelles
1units.itemsShallot
vegetable stock or water
500gUnsalted butter

Preparation

  1. Clean the chanterelles thoroughly.
  2. Finely chop a shallot and sauté with the chanterelles.
  3. Deglaze with a little water or vegetable stock to release the flavors from the pan and let the liquid evaporate.
  4. Put the chanterelles in a blender and pulse a few times until they reach the desired size.
  5. Whip the butter until fluffy and fold in the chanterelles.
