Buns of salted butter or black garlic butter

Deliciously crispy based on salted butter or black garlic butter.

Ingredients

500gUnsalted butter
seaweed powder
Black garlic

Preparation

  1. Melt the butter over low heat and clarify.
  2. Add the seaweed powder or black garlic to taste.
  3. Fill a siphon and aerate with 2 cartridges. Let stand for half an hour at room temperature.
  4. Dispense the butter into a cup. It should come out like semi-whipped cream. If it is too thin, let it stand a bit longer.
  5. Place the cups in a vacuum container. Attach the hose to the vacuum container and vacuum, pressing stop as soon as the butter has expanded sufficiently.
  6. Chill the container or freeze it.
  7. Remove from the cup once the butter has cooled properly and serve.
