500gUnsalted butter
seaweed powder
Black garlic
Preparation
- Melt the butter over low heat and clarify.
- Add the seaweed powder or black garlic to taste.
- Fill a siphon and aerate with 2 cartridges. Let stand for half an hour at room temperature.
- Dispense the butter into a cup. It should come out like semi-whipped cream. If it is too thin, let it stand a bit longer.
- Place the cups in a vacuum container. Attach the hose to the vacuum container and vacuum, pressing stop as soon as the butter has expanded sufficiently.
- Chill the container or freeze it.
- Remove from the cup once the butter has cooled properly and serve.
