Cheesecake with red fruit and citrus gel

Cheesecake according to the recipe from Koopmans Professioneel.

Ingredients

450gDr. Oetker Professional Mix for cheesecake
500gCrème fraîche

Preparation

  1. Place a sheet of parchment paper in a baking tin of approx. 37 cm x 28.5 cm.
  2. Prick the hard shortcrust pastry with a fork and place it in the baking tin.
  3. Sprinkle with granulated sugar and bake at 160°C for about 20 minutes.
  4. Let cool.
  5. Beat the cream cheese smooth in the food processor, add the crème fraîche.
  6. Put the eggs and cheesecake mix in a bowl and stir to combine.
  7. Add this mix to the cream cheese mixture and keep beating until a homogeneous (smooth) mass.
  8. Pour the mixture on top of the base and bake the cake for 50 minutes at 140°C.

  1. Zest the lemon, lime, and orange, squeeze the juice from the citrus fruits, and put everything in a pan.
  2. Add the water, sugar, and agar agar and bring to a boil.
  3. Let cool in the refrigerator.

  1. Cut the cheesecake to the desired size and finish with the citrus gel.
  2. Decorate with red fruit and cress.
