Parsnip and savory cream

A delicious thick cream of parsnip.

Ingredients

Parsnips
Milk
1units.itemsGarlic clove
1units.itemsShallot
Butter
Chicken stock
fresh savory

Preparation

  1. Peel the desired amount of parsnips and cut them into large pieces (remove the core beforehand if necessary).
  2. Finely chop the shallot and garlic and sauté in a little oil.
  3. Add the parsnip and sauté well.
  4. Deglaze with chicken stock and a splash of milk and gently cook the parsnip.
  5. Puree the cooked parsnip with a knob of butter and some fresh savory into a smooth cream.
  6. Pass through a sieve and season with salt.
