Bitter chocolate crumble

Bitter chocolate crumble with avocado mousse, salsa with chunky tomato pieces and pear jelly according to the recipe by Bresc.

Ingredients

Preparation

  1. Sift the flour and mix with cocoa, bitter chocolate, sugar, salt, harissa spice mix, and orange zest.
  2. Add the egg and knead.
  3. Add the butter and knead into a single mass.
  4. Wrap the dough in plastic wrap and let rest in the refrigerator.
  5. Place baking paper on a baking dish, crumble the dough onto the baking tray, and bake for 10 minutes at 180°C. Let cool.
  6. Puree the ripe avocado with the mango and the xanthan gum into a light cream.
  7. Peel the pear, remove the core, and cut into 8 wedges.
  8. Poach in a small layer of water with the korma and let cool.
  9. Dress the tart with the chocolate crumble as the base, then the avocado-mango cream on top.
  10. On top of the cream, add the salsa with chunky tomato pieces and finish with the pear jelly.
