Curry of chicken thigh
A classic curry with chicken and potato, full of flavor as it should be!Ingredients
3Green peppers
2green peppers (seedless, finely chopped)
1Shallot
500gsliced chicken thigh
2units.eetlepelGround cumin
1units.eetlepelfresh grated ginger
1units.eetlepelFish sauce
2units.eetlepelrapeseed oil
250gwaxy potato
250mlChicken stock
30gfresh, chopped coriander
350mlCoconut milk
3djoeroek poeroed leaves
Preparation
- Blend the peppers, coriander, fish sauce, cumin, ginger, shallot, and oil in a food processor into a paste.
- Place this on a low heat for 5 minutes.
- Sauté the sliced chicken with the potato cubes in sesame oil.
- Add the curry paste and mix well.
- Finally, add the coconut milk, stock, and kaffir lime and simmer gently for about 25 minutes until cooked through.
- Serve with rice.
