Dashi broth

Basic dish from Japanese cuisine.

Ingredients

25gkatsuobushi
1Water
20gkombu

Preparation

  1. Bring water to just below boiling, add the kombu and let it steep for 1 hour at about 60°C.
  2. After an hour, heat to 80°C, add the katsuobushi and let infuse for about 2 minutes.
  3. Strain the broth through a cloth.
