Preparation
- Soak the gelatin in cold water.
- Heat the cream, gin, and vanilla.
- Add the gelatin and dissolve.
- Strain the mixture.
- Add to the chocolate while stirring.
- Fill the molds with the mixture and place in the freezer.
- Remove the shapes from the mold and spray with the velvet.
- Decorate with pearls and gold leaf.
- Mix all ingredients into a smooth batter.
- Spread the batter in the mold and bake for 6 minutes in the oven at 160°C.
- Let the chestnut purée thaw, heat with the water and add agar.
- Bring to a boil and mix with a hand blender.
- Let set and whip into a nice cream.
- Blend the ice cream until smooth and soft and transfer to a quenelle mold.
- Place in the freezer.
- Process (brown) cookies into powder in a food processor.
- Cut the brittle to the desired size.
- Place the tree in the center of the plate and garnish with all ingredients and creations.
