French tomato tarte tatin

Savory French tarte tatin with tomatoes and herbs on a puff pastry base.

Have you ever baked a savory tarte tatin? This aromatic tomato tarte tatin is the summer recipe for which you only need a few ingredients. This tart with fresh tomatoes is also completely vegan.

Ingredients

Pepper
2Rosemary sprigs
3Sugar
1Tante Fanny puff pastry roll
400gTomatoes
Salt
4tarragon sprigs
3White balsamic vinegar

Preparation

  1. Preheat the oven to 200°C (top and bottom heat) and prepare the dough according to the instructions on the package.
  2. Heat an ovenproof, coated pan (ø approx. 22 cm) on the stove.
  3. Add sugar and vinegar and let simmer gently for 5 minutes until a light caramel forms.
  4. Add the cherry tomatoes, rosemary, and thyme, and season with salt and pepper.
  5. Roll out the dough and loosely place it over the tomatoes, trim off any excess dough, and place even pieces on the surface of the dough.
  6. Prick the dough several times with a fork.
  7. Place the pan on the rack in the middle of the oven and bake the tarte tatin for 25 - 30 minutes until golden brown.
  8. After baking, pour off any excess liquid, carefully invert the tart onto a plate, and garnish with tarragon.
  9. Serve immediately to prevent the puff pastry base from becoming soggy.
