
French tomato tarte tatin

Preparation
- Preheat the oven to 200°C (top and bottom heat) and prepare the dough according to the instructions on the package.
- Heat an ovenproof, coated pan (ø approx. 22 cm) on the stove.
- Add sugar and vinegar and let simmer gently for 5 minutes until a light caramel forms.
- Add the cherry tomatoes, rosemary, and thyme, and season with salt and pepper.
- Roll out the dough and loosely place it over the tomatoes, trim off any excess dough, and place even pieces on the surface of the dough.
- Prick the dough several times with a fork.
- Place the pan on the rack in the middle of the oven and bake the tarte tatin for 25 - 30 minutes until golden brown.
- After baking, pour off any excess liquid, carefully invert the tart onto a plate, and garnish with tarragon.
- Serve immediately to prevent the puff pastry base from becoming soggy.
