Ganache of 5 spices and white chocolate.

Ingredients

15 spices
450gSugar
600gWhite chocolate callets
50gUnsalted butter
Salt
300gWhipped cream

Preparation

  1. Bring cream with 5 spices to a boil, cool down and leave covered in the fridge overnight.
  2. Make a caramel from the sugar.
  3. Heat the cream with 5 spices, remove the caramel from the heat and carefully stir in the warm cream. Then let it boil for 30 seconds and remove from the heat source.
  4. Stir in the chocolate and butter, line a baking tray with parchment paper and pour the mixture into it. Then cool to room temperature.
  5. Freeze the tray, cut to desired size, and coat with the tempered chocolate.
