Fried chipotle peppers

Spicy snacks from Mexico.

Ingredients

Cream cheese
chipotle peppers
garlic croutons
Eggs
Flour

Preparation

  1. Remove the chipotle peppers from the sauce and rinse gently.
  2. Using a piping bag, fill the peppers with some cream cheese.
  3. Place them on foil in the refrigerator to firm up.
  4. Process the garlic croutons in the food processor until powdered.
  5. Beat a few eggs.
  6. Bread the stuffed peppers in flour, then egg, then the garlic crouton crumbs.
  7. Repeat this once more.
  8. Make sure the open end is well 'sealed' with breadcrumbs.
  9. Fry in oil until crispy.
  10. Serve with guacamole and lemon.
