Ingredients

15gBurgundian herbs
200gScharmedaillon

Pepper and salt
10mlBasil vinaigrette
80gCherry tomatoes
150gMixed beans

10gSmoked paprika powder
100mlSunflower oil

Celery
Grilled artichoke

Preparation

  1. Make a marinade of oil and Burgundian herbs.
  2. Marinate the thawed schar medallion for about 10 minutes in the marinade.
  3. Grill the medallions on a barbecue or grill pan and then finish cooking them in the oven.

  1. Drain the mixed beans.
  2. Mix the beans with halved cherry tomatoes and season with a basil vinaigrette.
  3. Add pepper and salt to taste.

  1. Stir the smoked paprika powder into a little oil (mioteer).
  2. Add the rest of the oil and let the mixture infuse for 30 minutes.

  1. Divide the bean salad over the plate.
  2. Place the grilled schar medallion on top.
  3. Drizzle the paprika oil over the dish.
  4. Garnish with grilled artichoke and finely chopped celery leaves.
