Preparation
- Wash and grate purple and yellow winter carrots. Cut into thin slices.
- Put the slices in a vacuum bag and add two tablespoons of goose fat, a bit of rosemary, garlic, thyme, and salt.
- Vacuum seal and cook in water at 90°C for 20 minutes.
