
Glaze based on condensed milk
Blown over from America, where many glazes are made using ‘full sweetened condensed milk’ as a base.Ingredients
300gglucose syrup
300gWater
132gGelatin mass
300gMilk chocolate
200gCondensed milk
optional: fat-soluble food coloring powder
300gVending machine sugar
non-woven hairnet
Preparation
- First make the gelatin mass: use 200 grams of gelatin to 1000 grams of hot water, pour the water over the gelatin, mix well (spatula) and let set in the fridge.
- Boil the water with the sugar and glucose.
- Pour this over the condensed milk and mix well.
- Stir in the gelatin mass.
- Pour this over the chocolate and mix au bain-marie until emulsified. Mix in the coloring with a hand blender.
- Strain through a fine sieve
