Glaze based on condensed milk

Blown over from America, where many glazes are made using ‘full sweetened condensed milk’ as a base.

Ingredients

300gglucose syrup
300gWater
132gGelatin mass
300gMilk chocolate
200gCondensed milk
optional: fat-soluble food coloring powder
300gVending machine sugar
non-woven hairnet

Preparation

  1. First make the gelatin mass: use 200 grams of gelatin to 1000 grams of hot water, pour the water over the gelatin, mix well (spatula) and let set in the fridge.
  2. Boil the water with the sugar and glucose.
  3. Pour this over the condensed milk and mix well.
  4. Stir in the gelatin mass.
  5. Pour this over the chocolate and mix au bain-marie until emulsified. Mix in the coloring with a hand blender.
  6. Strain through a fine sieve
