Classic apple pie

A classic apple pie according to the recipe from Koopmans Professional.

Ingredients

350gapplesauce
30gAlmond powder
15mlalmond aroma
2slices of Koopmans Professional Hard Viennese dough
150gRaisins
3gCinnamon
120gCustard powder
16Jonagold apples (or cleaned 1.8 kilos)
100gHoney
100gapricot jam or powdered sugar (decoration)
Granulated sugar

Preparation

  1. Line a baking tin of 37 cm x 28.5 cm with baking paper. Prick the dough with a fork and place it in the tin.
  2. Sprinkle with granulated sugar and bake at 160°C for about 20 minutes. Let cool.
  3. Peel the apples, remove the cores, and cut the apples into small cubes.
  4. Mix the apple cubes with the cinnamon, honey, raisins, and custard powder in a bowl.
  5. Mix the applesauce with the almond aroma. Spread the applesauce on the base using a spatula.
  6. Fill the tin with the apple mixture and press it down well. Place strips of hard Viennese dough on top in a classic lattice pattern. Bake at 160°C for about 50/60 minutes. Let the apple pie cool.
  7. Remove the pie from the tin. Dust the pie with powdered sugar or brush the lattice with apricot jam. Cut the pie to the desired size.
