
Cold espuma of white chocolate and yuzu
A refined and airy cold espuma of white chocolate and yuzu, in which creamy sweetness and fresh flavors come together perfectly.Tip: try making the espuma with pure chocolate as well.

150gWhite chocolate callets
300gyuzu purée
Preparation
- Bring the yuzu purée, cream, sugar, and agar to a boil together and pour over the chocolate.
- Fold together until the chocolate is fully dissolved.
- Fill a siphon with the mixture, charge with two cartridges, and chill for at least 4 hours.
- Tip: Try making this espuma with dark chocolate as well. In that case, replace the yuzu purée with milk and the white chocolate with dark chocolate. You will get a beautiful, airy chocolate mousse.
