
Crispy hazelnut praline
These crispy pralines can be made in any shape and are therefore very versatile.Ingredients
70gpure chocolate callets
20gcocoa butter in powder form
20gpraline paste
20gkaolin (edible clay)
Preparation
- Mix 70 grams of dark chocolate with 20 grams of mycryo and 20 grams of praline paste and gently heat in the microwave
- Stir well until everything is melted
- Add the kaolin and mix together
- Pour the mixture into the desired mold and let cool or freeze until you have nice, crispy pralines.
