Crispy cookies made with sushi rice

Delicious bite to accompany Asian dishes.

Ingredients

1Sushi rice
1.35Water
200mlRice vinegar
herbs or dried seaweed of your choice

Preparation

  1. Wash the sushi rice and let it soak for 15 minutes. Drain well.
  2. Cook the rice for 40 minutes (rice cooker) in the water. The rice should be fully cooked.
  3. Season with the rice vinegar. Then blend completely in the food processor with herbs or dried seaweed. If the rice is too dry, you can add some water.
  4. Spread out on a silpat and then dry in the oven at 120°C for about 1.5 hours until crispy.
