Crispy lettuce

With this technique, you turn a delicate product into a crispy bite.

Ingredients

lightly beaten egg white
Pan sucre

Preparation

  1. Remove the leaves from pan sucre. Dip them in (salted) beaten egg white.
  2. Pat dry, and place them on drying foil in the dehydrator, about 6 hours.
  3. This technique also works well with other 'delicate' products such as edible flowers.
