With this technique, you turn a delicate product into a crispy bite.Ingredients
lightly beaten egg white
Pan sucre
Preparation
- Remove the leaves from pan sucre. Dip them in (salted) beaten egg white.
- Pat dry, and place them on drying foil in the dehydrator, about 6 hours.
- This technique also works well with other 'delicate' products such as edible flowers.
