Preparation
- Peel and cook the white asparagus, then cut them in half.
- Wrap 4 asparagus spears in raw ham.
- Take brick pastry and brush the edges with egg white.
- Place the asparagus bundle on top, sprinkle with fresh parsley, and fold it closed into a 'spring roll'.
- Fry the bundle in a pan with hot oil until crispy and golden brown, and serve immediately.
