Asparagus spring roll

Crispy spring roll filled with white asparagus and raw ham. Serving tip: hollandaise sauce and chive oil.

Ingredients

White asparagus
Fresh parsley
Egg white
Raw ham
Brick pastry

Preparation

  1. Peel and cook the white asparagus, then cut them in half.
  2. Wrap 4 asparagus spears in raw ham.
  3. Take brick pastry and brush the edges with egg white.
  4. Place the asparagus bundle on top, sprinkle with fresh parsley, and fold it closed into a 'spring roll'.
  5. Fry the bundle in a pan with hot oil until crispy and golden brown, and serve immediately.
