Pancake with Veluwe sausage, avocado, peach and allspice

"Pancake" with a delicious filling and lime and allspice cream.

100mlEgg white
juice and zest of 1 lime
allspice oil (infuse 35 grams allspice in 1 liter oil)

1Avocado
garlic oil
Tabasco
Salt
dry Veluwe sausage
1pickled peach
Ghoa cress
Lime (juice and zest)
1Red onion

Preparation

Lime cream and piment cream

  1. Mix the egg white, yogurt, and salt.
  2. Blend in the oil with an immersion blender.

- For the lime cream: Add the juice and zest of 1 lime to the yogurt mixture.
- For the piment cream: Replace the oil with piment oil.

  1. Mash the avocado and mix with the garlic oil, tabasco, salt, lime zest, and lime juice.
  2. Cut the pickled peach into brunoise.
  3. Cut out rounds from a wrap. Slice the trimmings into thin strips and fry until crispy at 180°C.
  4. Slice a dry Veluwe sausage into thin slices.
  5. Finely chop the little gem.
  6. Slice the red onion into fine rings and pickle them
