
Beef brisket with cassoulet of white beans, dry sausage and lovage

Preparation
- Sauté a shallot with garlic and sliced dry sausage.
- Add the passata and let it reduce.
- Add the drained beans to the sauce.
- Finish with finely chopped lovage.
- Season with salt and pepper.
- Slice the sous-vide cooked chuck into pieces.
- Briefly heat the chuck by grilling on the barbecue or for 10 minutes in the oven at 160°C.
