
Soup of almond, macadamia and smoky paprika

50gwhite bread without crust
Chardonnay vinegar
1lpoultry or vegetable stock
75gmacadamia nuts
75gwhite almonds
smoky paprika cream

Preparation
- Put the stock in a pan with the bread and nuts. Bring to a boil. Let simmer gently for at least 10 minutes. Purée (blender) the mixture and strain.
- Season with a little olive oil and some chardonnay vinegar. Add a small splash of cream.
- Serve the soup with some dollops of smoked paprika cream and fresh cress.
