
Apple tarte tatin
Spoon a little warm caramel over it before serving.Ingredients
Apple
200gSugar
1Glucose
juice of 1 lemon
Puff pastry
70gWater
Preparation
- Use a ring cutter to cut out circles from puff pastry and prick them with a fork
- Make a blonde caramel from the sugar, water, and glucose. Once you have a blonde caramel, carefully pour in the juice of 1 lemon and then the apple cut into brunoise.
- Heat for 30 seconds and then pour through a sieve (save the caramel).
- Arrange the apple in a ring on the puff pastry and bake in an oven at 180°C. Before serving, spoon a little warm caramel over the top.
