Preparation
- Clean the chili pepper and finely chop it.
- Cook the rice vinegar together with the sugar and the finely chopped chili pepper.
- Cut the red onion and red cabbage into strips and place them separately in a container.
- Pour half of the sweet and sour mixture over the sliced onions and the rest over the red cabbage.
- Cool immediately.
- Clean the chili pepper and finely chop it.
- Clean the little gem and toss the leaves in the vinaigrette.
- Heat the pulled pork.
- Warm the tortillas and place them on the plates.
- Divide the red cabbage, little gem, "pulled pork", and red onions over the tortillas.
- Finish with the spicy pepper sauce and the coriander.
