
Tortilla with prawns, pomegranate and coriander
Tortillas as a Christmas creation: surprising! You can go in all sorts of creative directions with them, for example this version with prawns and pomegranate.Ingredients
1bottle of yuzu juice
1bottle of Royal umami
5corn tortillas
1bottle of Kewpie mayonnaise
2Avocados
1Lime
Garlic
10prawns
garnish of red onion, cucumber and corn
salad with coriander, spring onion, frisée mesclun, chives, and chervil
1Pomegranate
Preparation
- Blend the avocado smooth with the lime juice and half a clove of garlic. Fill a piping bag with this and vacuum seal.
- Season the Kewpie mayonnaise with the yuzu juice and Royal umami.
- Fry the prawns and season with salt.
- Heat the tortilla on a hot plate or in a pan. First pipe the Kewpie mayonnaise onto the tortilla. Place the prawns on top. Pipe the avocado cream in between.
- Place the salad on the prawns and then add some red onion, cucumber, corn, and pomegranate seeds. Grate some lime over the top with a fine grater.
