Tajarin is a traditional pasta from Alba - Piemonte. This special pasta is thicker than capellini and finer than tagliatelle. Traditionally, tajarin is eaten on festive occasions, or for example with Sunday lunch. In Alba, they serve the pasta with rich and hearty (meat) sauces. This variant is enriched with red Barolo wine.
