The Vincotto wine vinegar with lemon is a special type of vinegar. It is made from two different grape varieties: the Negroamaro and the black Malvasia. They are cooked down to one-fifth of the volume. After this, the syrup is poured into oak barrels, along with the vinegar. Then the vinegar must mature for no less than four years. After these four years, the lemon juice from specially selected lemons is added. After six months of aging, a delicious mix of original Vincotto wine vinegar and lemon is created. No colorings or preservatives are added during the process. This gives the product a sweet and velvety taste. This vinegar adds depth to dishes with meat and vegetables, but also gives a nice twist to dressings and sauces.
