In Ireland, approximately 100,000 mainly small-scale family businesses are involved in extensive cattle farming. Due to the mild Irish climate, the cattle here remain almost permanently in green pastures. The cattle are kept in mixed social groups and, due to the large amount of space, exhibit natural behavior. The food consists of more than 85% grass and clover. This ensures an even distribution of fat and a beautiful marbling of the meat. The meat has a slightly sweet and intense beef flavor.
