Luzerne is the original name of this sprout vegetable. In the Netherlands, we call it Alfalfa. The name Al-fal-fa comes from Arabic and means 'father of all food' or 'the best food'. Alfalfa is remarkably rich in calcium. Additionally, it is a deliciously fresh vegetable. A small raw pinch adds just a little something extra.
