Achterhooks Jong Belegen is an organic cheese that is matured for 6-8 weeks and supplied as a 10 kg wheel. The milk for the "Achterhooks" cheeses is collected from five organic farms in Achterhoek. Cheesemaker Aurora produces Gouda cheeses from this milk. An important detail is that part of the milk comes from Jersey cows.
