Blue Shropshire originated in the early 70s as a Scottish alternative to the famous Blue Stilton. However, the name Shropshire had nothing to do with the county of the same name but was easy to pronounce. Nowadays, the cheese comes from central England and is made by a small number of cheesemakers renowned for Blue Stilton. It is made from full-fat pasteurized cow's milk, and after the addition of blue mold and 4 months of aging, a delicious cheese is created, creamy, rich, and spicy in flavor. The dark yellow color, resulting from the addition of natural coloring annatto, and the fine blue veins make it a feast for the eyes. A real eye-catcher on your cheese platter.
