Farmhouse sandwich with three cheeses and onion marmalade

We prepare this warm cheese 'toastie' made with sourdough bread and three types of cheese on the griddle.

Tip: By pressing the toastie with a meat press while grilling, it becomes deliciously crispy.

Ingredients

8Red onions
100mlVincotto raspberry vinegar
100mlRed wine
150gSugar
port syrup

Butter
B'rustiek brown floor bread
Mature cheddar
Blue Shropshire
Gruyère mild
Meat press

Preparation

  1. Slice the red onions into thin rings.
  2. Let the onions and sugar "simmer" over low heat.
  3. Deglaze with the vinegar and wine.
  4. Reduce until it becomes a syrupy mixture.
  5. Finally, add a splash of port syrup.

  1. Bake the bread and cut it into thick slices.
  2. Brush both sides of the bread slices with butter.
  3. Grate the three cheeses and mix well together.
  4. Place a slice of bread on the hot griddle.
  5. Spoon some onion marmalade on top.
  6. Add the grated cheese.
  7. Cover with the second slice of bread.
  8. Place the meat press on the bread.
  9. Flip the whole thing so both sides brown and crisp nicely and the cheese can melt.
