Smash & raclette sandwich

Ingredients

150gSugar
100mlVincotto raspberry vinegar
100mlRed wine
8Red onions
port syrup

Beef 'pucks'
Potato bun
Butter
Chives
Raclette cheese slices
Streaky smoked bacon
Meat press
Hamburger and cheese melting lid

Preparation

  1. Slice the red onions into thin rings.
  2. Let the onions and sugar "simmer" over low heat.
  3. Deglaze with the vinegar and wine.
  4. Reduce to a syrupy consistency.
  5. Finally, add a splash of port syrup.

  1. Brush the potato bun with butter and toast on the griddle.
  2. Place the burger puck on the griddle and smash it.
  3. Fry on both sides.
  4. Also fry the bacon and onion marmalade on the griddle.
  5. Place the raclette on the burger, pour a little water next to it, and cover the burger with the melting lid so the cheese melts well.
  6. Assemble the bun with the burger, onion marmalade, and fried bacon.
  7. Garnish with chopped chives.
