Fourme d'Ambert is a mild blue cheese from the Auvergne, made from cow's milk. The cheese has a nicely distributed blue-veined structure of gray/green/blue mold spots. This is because holes are pierced in the cheese during ripening, allowing extra air to be introduced, which stimulates the growth of the blue mold. This characterful cheese has a brown-gray rind and ivory-white interior. It has a pleasantly creamy mouthfeel and a rich, spicy flavor.
The cheese pairs excellently with full, sweet flavors. For example, incorporate the cheese into a mousse for a surprising amuse-bouche, in combination with red wine sorbet and fig compote.
