The red mullet belongs to the perch-like fish and is also known as the king of the gurnard. It lives among other places on the seabed off the French coast and in the North Sea. It is caught using the flyshoot technique. An important advantage of this technique is that the fish does not get damaged; even the slime layer remains intact. Red mullet is a delicious, moderately fatty fish that is also easy to fillet.
